Blitvu volimo i jedemo, znamo koliko je zdrava i što sve lijepoga od nje možemo napraviti, no jeste li ikad čuli za morsku blitvu? Nema baš nikakve veze s morskom salatom, a naziva se još i divja blitva. Roiječ je o biljci latinskog naziva Beta vulgaris L. ssp. maritima i divlji je predak niza kultiviranih pripadnika iste vrste, uključujući blitvu, šećernu repu i ciklu. Da, blitva i cikla su rodice.
Morska blitva uzgajala se u davnini na cijelom Sredozemlju, a pažljivim odabirom od nje su uzgojeni novi oblici povrća koje nam je danas puno bolje poznato. Prepoznat ćete je po dugoj stabljici koja je često crvenkaste boje, a ovisno o uvjetima u kojima raste može biti uspravna ili polegnuta. Lišće joj je mesnato, bez dlaka i izraženih žila, baš kao u "obične" blitve, no ponešto je drugačijeg, nepravilnijeg oblika. Samonikla raste od Sredozemlja sve do Indijskog potkontinenta, najčešće u neposrednoj blizini mora, ali ju se može naći i na kultiviranim površinama kao korov.
Iako se morska blitva i danas ponegdje uzgaja kao lisnato povrće, samonikla se bere posvuda, a cijenjena je zbog toga što je lako dostupna, kao i zbog činjenice da sadrži široku lepezu sastojaka s protuupalnim i antioksidativnim djelovanjem, zbog čega se naširoko primjenjivala u narodnoj medicini.
Nama je u ovom slučaju ipak najzanimljivija kao povrće pa ako na nju naiđete, a mogli biste jer upravo joj počinje sezona i traje do konca svibnja, odaberite mlado lišće, jer starije je gorkasto, osobito kad udare vrućine. Volite li špinat, morska će vam blitva biti osobito draga, a što se tiče korištenja u kuhinji, kuhajte ju baš kao i običnu blitvu. Također je možete ubaciti u mišanciju, različite vrste variva i juha, možete ju jesti sirovu na salatu a njome možete nadjenuti focaccije i pite. Van Italije je malo opznato kako je baš morska blitva, a ne špinat kako se često navodi, glavni sastojak poznate ligurske torte pasqualine, za koju smo nedavno dobili recept.
Nijega se na odmet podsjetiti, stoga ga prenosimo, prilagođenog morskoj blitvi.
Torta pasqualina
Sastojci:
500 g lisnatog tijesta
500 g morske blitve
400 g ricotte
50 g parmezana
7 jaja
maslinovo ulje
sol
Priprema:
Prokuhajte morsku blitvu u posoljenoj vodi 3-4 minute, procijedite, ubacite u hladnu vodu pa temeljito ocijedite.
Izmiješajte 2 jaja, riccotu, parmezan pa ih dodajte narezanoj blitvi, posolite i popaprite prema ukusu.
U okrugli kalup stavite jedan list tijesta premazan maslinovim uljem pazeći da tijesto ide preko ruba kalupa. Napunite nadjevom, napravite udubine u nadjevu i u njih razbijte preostala jaja pazeći da se žumanjci ne razliju. Pažljivo prekrijte drugim listom tijesta pa ga premažite jajem pomiješanim s maslinovim uljem.
Pecite 1 sat na 180 stupnjeva Celzija.

Blitvu volimo i jedemo, znamo koliko je zdrava i što sve lijepoga od nje možemo napraviti, no jeste li ikad čuli za morsku blitvu? Nema baš nikakve veze s morskom salatom, a naziva se još i divja blitva. Roiječ je o biljci latinskog naziva Beta vulgaris L. ssp. maritima i divlji je predak niza kultiviranih pripadnika iste vrste, uključujući blitvu, šećernu repu i ciklu. Da, blitva i cikla su rodice.
Morska blitva uzgajala se u davnini na cijelom Sredozemlju, a pažljivim odabirom od nje su uzgojeni novi oblici povrća koje nam je danas puno bolje poznato. Prepoznat ćete je po dugoj stabljici koja je često crvenkaste boje, a ovisno o uvjetima u kojima raste može biti uspravna ili polegnuta. Lišće joj je mesnato, bez dlaka i izraženih žila, baš kao u "obične" blitve, no ponešto je drugačijeg, nepravilnijeg oblika. Samonikla raste od Sredozemlja sve do Indijskog potkontinenta, najčešće u neposrednoj blizini mora, ali ju se može naći i na kultiviranim površinama kao korov.
Iako se morska blitva i danas ponegdje uzgaja kao lisnato povrće, samonikla se bere posvuda, a cijenjena je zbog toga što je lako dostupna, kao i zbog činjenice da sadrži široku lepezu sastojaka s protuupalnim i antioksidativnim djelovanjem, zbog čega se naširoko primjenjivala u narodnoj medicini.
Nama je u ovom slučaju ipak najzanimljivija kao povrće pa ako na nju naiđete, a mogli biste jer upravo joj počinje sezona i traje do konca svibnja, odaberite mlado lišće, jer starije je gorkasto, osobito kad udare vrućine. Volite li špinat, morska će vam blitva biti osobito draga, a što se tiče korištenja u kuhinji, kuhajte ju baš kao i običnu blitvu. Također je možete ubaciti u mišanciju, različite vrste variva i juha, možete ju jesti sirovu na salatu a njome možete nadjenuti focaccije i pite. Van Italije je malo opznato kako je baš morska blitva, a ne špinat kako se često navodi, glavni sastojak poznate ligurske torte pasqualine, za koju smo nedavno dobili recept.
Nijega se na odmet podsjetiti, stoga ga prenosimo, prilagođenog morskoj blitvi.
Torta pasqualina
Sastojci:
500 g lisnatog tijesta
500 g morske blitve
400 g ricotte
50 g parmezana
7 jaja
maslinovo ulje
sol
Priprema:
Prokuhajte morsku blitvu u posoljenoj vodi 3-4 minute, procijedite, ubacite u hladnu vodu pa temeljito ocijedite.
Izmiješajte 2 jaja, riccotu, parmezan pa ih dodajte narezanoj blitvi, posolite i popaprite prema ukusu.
U okrugli kalup stavite jedan list tijesta premazan maslinovim uljem pazeći da tijesto ide preko ruba kalupa. Napunite nadjevom, napravite udubine u nadjevu i u njih razbijte preostala jaja pazeći da se žumanjci ne razliju. Pažljivo prekrijte drugim listom tijesta pa ga premažite jajem pomiješanim s maslinovim uljem.
Pecite 1 sat na 180 stupnjeva Celzija.
