Čak 40% ribe iz restorana s ribarnica i iz drugih izvora posljednjih godina bilo je lažno označeno. Prema istraživanjima, raste prodaja krivotvorene ribe diljem svijeta. Riječ je biznisu vrijednom 148 milijardi dolara. Iako smo mediteranska zemlja, i na našem tržištu prisutna je takozvana zamjenska, jeftinija riba po cijeni originalne, donosi emisija HRT-a Potrošački kod.

U ribarnici na zagrebačkom Dolcu ponuda je velika, no gužve nema. Poznavatelji ribe kažu da nigdje nema bolje ponude. Svježa riba, riba iz uzgoja, uvozna - svatko može naći nešto za sebe.

- Na ribi nema ekstra zarade, morate računati da je tu i prijevoz - kaže za Potrošački kod Milena Bujas Sinović.

Najjeftnija je plava riba srdelica, 20-25 kuna za kilogram, škampi i kovači po 250 kn/kg. Za svaku ribu se nađe kupaca, manje se kupuje skuplja riba, nju više kupuju restorani.

Proda se štošta, pa i krivotvorena riba s lažnom deklaracijom. Lošije vrste kupcima se nude kao kvalitetne. Guardianova analiza upućuje na to da se problem vezan za takvu vrstu kriminala u pet godina udvostručio.

Najlošija je situacija u Španjolskoj, Njemačkoj, na Islandu te u Finskoj. Kirnje su najčešće pogrešno označene, a plava i žutoperajna tuna, list i grgeč najrjeđe. Pogrešno označene ribe po obliku i okusu na tragu su one kvalitetne, ali na tanjuru dobijete ribu uzgojenu u Vijetnamu ili u Kambodži.

Neke vrste dobit ćete u restoranu pod najskuplje ribe, ali tek molekularna analiza nam može reći o kojoj se vrsti radi.

U Italiji su otkriveni slučajevi da se kao lignja prodaje napuhača, riba koja zna biti i otrovna. U SAD-u se najčešće krivotvore škarpina i losos, Umjesto njih prodaje se vijetnamski som kojeg ima i na našem tržištu. Većinom je riječ o somu iz uzgoja, punom antibiotika, bakterija i hormona.

Imamo li mi toga i na svome tržištu potrebno je tek istražiti.

Lažna riba češće se prodaje zamrznuta. U svijetu je konzumacija zamrznute ribe česta jer u takvom je obliku dostupnija i jeftinija. No hrvatski su kupci skeptični prema ribi iz zamrzivača - ne znaju koliko dugo stoji i boje se da u njoj nije ostalo hranjivih tvari.

- Kod nas potrošači imaju diverziju prema ribi izvana - tvrdi trgovac ribom Branimir Brzić.

Dok se svježa riba može iskoristiti najkasnije dva ili tri dana nakon ulova, zamrznuta može stajati četiri do šest mjeseci i sačuvati kvalitetu. No riba se mora zamrznuti odmah nakon ulova. Mora biti na stabilnoj i niskoj temperaturi cijelo vrijeme. Odmrzava se neposredno prije pripreme.

Stručnjaci ističu da je ribu najbolje kupovati od provjerenih dobavljača. Pokvarenu pak možete prepoznati po mutnoj sluzi na koži. Svježa riba ima izbočene oči, prozirnu rožnicu i crnu blistavu zjenicu.

- Volim naglasiti da uvijek kupujemo u Hrvatskoj. Ali to je nemoguće, cijene su jeftinije izvana jer se uzimaju veće količine, što se više uzme to je jeftnije - objašnjava Brzić.

Diljem svijeta s lažnom se deklaracijom prodaje čak 36% svih riba i morskih organizama i taj je trend u porastu. Nova europska regulativa koja je na snazi više od godinu dana trebala bi osigurati ažurnije provođenje propisa kako bi se građani bolje zaštitili od prijevara vezanih za hranu, piše HRT.

Čak 40% ribe iz restorana s ribarnica i iz drugih izvora posljednjih godina bilo je lažno označeno. Prema istraživanjima, raste prodaja krivotvorene ribe diljem svijeta. Riječ je biznisu vrijednom 148 milijardi dolara. Iako smo mediteranska zemlja, i na našem tržištu prisutna je takozvana zamjenska, jeftinija riba po cijeni originalne, donosi emisija HRT-a Potrošački kod.

U ribarnici na zagrebačkom Dolcu ponuda je velika, no gužve nema. Poznavatelji ribe kažu da nigdje nema bolje ponude. Svježa riba, riba iz uzgoja, uvozna - svatko može naći nešto za sebe.

- Na ribi nema ekstra zarade, morate računati da je tu i prijevoz - kaže za Potrošački kod Milena Bujas Sinović.

Najjeftnija je plava riba srdelica, 20-25 kuna za kilogram, škampi i kovači po 250 kn/kg. Za svaku ribu se nađe kupaca, manje se kupuje skuplja riba, nju više kupuju restorani.

Proda se štošta, pa i krivotvorena riba s lažnom deklaracijom. Lošije vrste kupcima se nude kao kvalitetne. Guardianova analiza upućuje na to da se problem vezan za takvu vrstu kriminala u pet godina udvostručio.

Najlošija je situacija u Španjolskoj, Njemačkoj, na Islandu te u Finskoj. Kirnje su najčešće pogrešno označene, a plava i žutoperajna tuna, list i grgeč najrjeđe. Pogrešno označene ribe po obliku i okusu na tragu su one kvalitetne, ali na tanjuru dobijete ribu uzgojenu u Vijetnamu ili u Kambodži.

Neke vrste dobit ćete u restoranu pod najskuplje ribe, ali tek molekularna analiza nam može reći o kojoj se vrsti radi.

U Italiji su otkriveni slučajevi da se kao lignja prodaje napuhača, riba koja zna biti i otrovna. U SAD-u se najčešće krivotvore škarpina i losos, Umjesto njih prodaje se vijetnamski som kojeg ima i na našem tržištu. Većinom je riječ o somu iz uzgoja, punom antibiotika, bakterija i hormona.

Imamo li mi toga i na svome tržištu potrebno je tek istražiti.

Lažna riba češće se prodaje zamrznuta. U svijetu je konzumacija zamrznute ribe česta jer u takvom je obliku dostupnija i jeftinija. No hrvatski su kupci skeptični prema ribi iz zamrzivača - ne znaju koliko dugo stoji i boje se da u njoj nije ostalo hranjivih tvari.

- Kod nas potrošači imaju diverziju prema ribi izvana - tvrdi trgovac ribom Branimir Brzić.

Dok se svježa riba može iskoristiti najkasnije dva ili tri dana nakon ulova, zamrznuta može stajati četiri do šest mjeseci i sačuvati kvalitetu. No riba se mora zamrznuti odmah nakon ulova. Mora biti na stabilnoj i niskoj temperaturi cijelo vrijeme. Odmrzava se neposredno prije pripreme.

- Volim naglasiti da uvijek kupujemo u Hrvatskoj. Ali to je nemoguće, cijene su jeftinije izvana jer se uzimaju veće količine, što se više uzme to je jeftnije - objašnjava Brzić.

Čak 40% ribe iz restorana s ribarnica i iz drugih izvora posljednjih godina bilo je lažno označeno. Prema istraživanjima, raste prodaja krivotvorene ribe diljem svijeta. Riječ je biznisu vrijednom 148 milijardi dolara. Iako smo mediteranska zemlja, i na našem tržištu prisutna je takozvana zamjenska, jeftinija riba po cijeni originalne, donosi emisija HRT-a Potrošački kod.

U ribarnici na zagrebačkom Dolcu ponuda je velika, no gužve nema. Poznavatelji ribe kažu da nigdje nema bolje ponude. Svježa riba, riba iz uzgoja, uvozna - svatko može naći nešto za sebe.

- Na ribi nema ekstra zarade, morate računati da je tu i prijevoz - kaže za Potrošački kod Milena Bujas Sinović.

Najjeftnija je plava riba srdelica, 20-25 kuna za kilogram, škampi i kovači po 250 kn/kg. Za svaku ribu se nađe kupaca, manje se kupuje skuplja riba, nju više kupuju restorani.

Proda se štošta, pa i krivotvorena riba s lažnom deklaracijom. Lošije vrste kupcima se nude kao kvalitetne. Guardianova analiza upućuje na to da se problem vezan za takvu vrstu kriminala u pet godina udvostručio.

Najlošija je situacija u Španjolskoj, Njemačkoj, na Islandu te u Finskoj. Kirnje su najčešće pogrešno označene, a plava i žutoperajna tuna, list i grgeč najrjeđe. Pogrešno označene ribe po obliku i okusu na tragu su one kvalitetne, ali na tanjuru dobijete ribu uzgojenu u Vijetnamu ili u Kambodži.

Neke vrste dobit ćete u restoranu pod najskuplje ribe, ali tek molekularna analiza nam može reći o kojoj se vrsti radi.

U Italiji su otkriveni slučajevi da se kao lignja prodaje napuhača, riba koja zna biti i otrovna. U SAD-u se najčešće krivotvore škarpina i losos, Umjesto njih prodaje se vijetnamski som kojeg ima i na našem tržištu. Većinom je riječ o somu iz uzgoja, punom antibiotika, bakterija i hormona.

Imamo li mi toga i na svome tržištu potrebno je tek istražiti.

Lažna riba češće se prodaje zamrznuta. U svijetu je konzumacija zamrznute ribe česta jer u takvom je obliku dostupnija i jeftinija. No hrvatski su kupci skeptični prema ribi iz zamrzivača - ne znaju koliko dugo stoji i boje se da u njoj nije ostalo hranjivih tvari.

- Kod nas potrošači imaju diverziju prema ribi izvana - tvrdi trgovac ribom Branimir Brzić.

Dok se svježa riba može iskoristiti najkasnije dva ili tri dana nakon ulova, zamrznuta može stajati četiri do šest mjeseci i sačuvati kvalitetu. No riba se mora zamrznuti odmah nakon ulova. Mora biti na stabilnoj i niskoj temperaturi cijelo vrijeme. Odmrzava se neposredno prije pripreme.
